Julbord is another phrase used for a Scandinavian feast during Christmas time.
Each year it's customary to fill the table with meats, cheeses, and different versions of husmanskost while gathering as a family in the low light to enjoy this filling, delicious food. Husmanskost are dishes that remind us of home and Scandinavian tradition.
One of the most beloved versions of husmanskost that gets served during a Swedish julbord is köttbullar, also known as Swedish Meatballs. Meatballs come in many forms around the world, but the Swedish meatball is a well-appreciated version.
This dish is the perfect essence of the holidays and has been loved for centuries. Without köttbullar, Swedish Christmas simply wouldn’t be the same.
ingredients
3 slices of gluten-free bread
1 cup of milk
2 eggs
2 lbs lean, ground beef
½ lb ground pork
1 tbsp of salt
1 tbsp of sugar
1 tbsp of black pepper
4 tbsp butter
4 sprigs of parsley, finely chopped
½ yellow onion, finely minced
3 cloves of garlic, crushed
5 tbsp of gluten-free flour
preparation
Set aside your meats (both pork and beef) into a large bowl.
In a medium bowl add your milk.
Cut the crust off from your gluten-free bread and begin to soak the bread slices into the bowl of milk. Using your hands, break down the bread into smaller and smaller pieces.
beat eggs In a small bowl, then add to your bread and milk combination.
combine your bread, milk, and egg combination to the meat mixture in the large bowl. Work the mixture together using your hands, while adding almost all of the remaining ingredients: salt, sugar, pepper, parsley, onion, garlic, and gluten-free flour. Mix thoroughly together using your hands until completely blended.
roll small, individually-sized meatballs that are slightly larger than a quarter in size (or even larger if you desire). Make as many as you can to finish off the meat mixture.
cooking
Put your butter in a skillet and begin adding the meatballs. cook until they are golden brown on the outside and cooked through on the inside — use a meat thermometer to confirm.
serving
serve with gravy, potatoes (boiled or mashed) and Swedish lingonberry jam.
